Fanny Sabre Beaune Les Sceaux 2009
Another tour of Dogistsan which mostly means less sleep, much more walking and scooping up dog droppings. We’ve reached an understanding of sorts – I take him for 3-4 walks a day, feed him, play ball and wash him – and in return he stays off the sofa (at least until I’m out of sight).
This is the third Fanny Sabre I’ve tried. Each has been notable for its lightness and perfume. The one word tasting note would be – stems. Of course I’ve scribbled many more descriptors. . . It’s pretty, fragrant and curiously flinty and to open it reminds me of ash and char. This subsides leaving strawberry and wood spice and dried citrus and roots; stems. Slippery and yet structured. The tannins have a tea leaf firmness and small good savouriness to them and again you can taste the method and technique. At this point in time I prefer this to the Pommard.
Paired with beef short ribs and panfried gnocchi.
